Spinach Pomegranate Salad

For the dressing:
1/2 C. pomegranate juice
1 Tbsp. balsamic vinegar
1 tsp. Dijon mustard
1 tsp. honey
1/2 C. vegetable oil
salt and freshly ground black pepper to taste

For the salad:
4 C. baby spinach leaves
1 apple, cored and chopped
1/3 C. pomegranate seeds
1/3 C. chopped toasted walnuts
2 oz. crumbled blue cheese
1/3 C. pomegranate vinaigrette

In a medium bowl, whisk together all dressing ingredients. In another large bowl, toss salad ingredients. Dress and serve immediately.
