Chunky Beef Chili

2 lb. boneless beef chuck roast, cut into 1 in. cubes
1 large onion, finely chopped
1-2 chipotle chiles in adobo sauce, chopped
1 ancho chile, cut into small pieces
1 Tbsp. chili powder
1 tsp. cumin
salt to taste (about 2 tsp.)
1/2 tsp. garlic powder
2 cans (14.5oz. each) diced tomatoes with green chiles, undrained
15 oz. can black beans, drained and rinsed

In a 3-4 qt slow cooker, mix all ingredients.
Cover and cook on low for 8-10 hours on high for 4-5 hours.

  1. We like this over rice. But chili is always good with cornbread.
