Creamy Cheddar Soup

1 small onion, finely chopped
2 large pimentos, finely chopped
3 Tbsp. butter
3 Tbsp. all-purpose flour
1 1/2 C. chicken stock
1 1/2 C. half and half
3/4 C. grated sharp Cheddar cheese
salt and pepper to taste
dash of cayenne pepper (optional)

In a saucepan, saute onion and pimentos in butter for 5-7 min. Blend in flour. Add stock and half and half. Cook until thickened. Add cheese and stir until melted. Add salt and pepper to taste. Add cayenne, if desired.
