Polynesian Cheese Spread

16oz. cream cheese, softened
8oz can crushed pineapple, drained
1 green pepper, finely chopped
1 small sweet onion, finely chopped
1/2 C. pecans, chopped

Mix ingredients well & refrigerate 8+hrs. Serve with crackers.

Helpful Tip: Take this spread to another level by adding 3+Tbsp. sweetened, flake coconut, 1tsp. rum extract, and substitute lightly toasted, chopped macadamia nuts for the pecans. You can also add up to 1tsp. of seasoned salt to both versions, if desired. This sweeter version is best served with vanilla wafers or a sweeter cracker, such as Wheat Thins.

  1. I love the original version of this with Sociables crackers. The savory, sesame crackers are perfect with it!
    Serving suggestions: Using a whole pineapple, slice vertically down one side just enough so it will not roll. On the opposite side, slice vertically to remove enough to hollow out pineapple while leaving leaves. Hollow out the pineapple, leaving a pineapple boarder inside. Place dip in the pineapple and top with additional chopped nuts.
    This can also be formed into a cheese ball. Simply form it, roll in an additional cup of chopped nuts and wrap in plastic wrap to refrigerate.
